Slow cooker magic

A couple weeks ago, I went to the farmers' market and brought home three bags of veggies, including a bunch of four leeks. A day later, Flylady's yahooo list served up a mission to get rid of one cookbook. I went and picked up The Everyday Low Carb Slow Cooker Cookbook, thinking, "I haven't used this in ages. In fact, have I ever used this book?"

I opened it to a random page, just to see if there was something in there of value or if it would be culled, and found "chicken with mushrooms and leeks." It looked really good.
